ReplyDeleteI would do Roast Chicken with roasted vegetables and cauliflower cheese, then use the mince for a massive chilli and add in lots of veg to bulk it up. I would use the other meat for fajitas.

ReplyDeletecan't beat a roast joint. start it all off with a nice butternut squash soup, roasted joint witha mix of roast and steamed veggies, with a blue cheese sauce, finished up with a tarte tatine of the sweeter veggies, carrots and beetroot. Cracking!!

1. I would make a vegetable and Red Lentil Dahl - a great way to use vegetables and lots of varieties -we all love this.
ReplyDelete2. Vegetable soup which I make often as its cheap and only uses a few ingredients.
3. Mince Pasta Bake - this is our family favourite.
4. Roasted vegetable lasagne with crusty bread.
5. Chicken stir fry, nice and easy one - I am teaching my daughter to make a few dishes.
6.A good old roast with all the veg and gravy
7. A chicken and veg pie made with the leftovers from the roast.
I'd swap the chicken for more vegetables (I'm veggie) and make soup followed by stuffed squash.

ReplyDeleteI'd make a whole week's worth of meals, starting, of course, with a Sunday roast. The roast's left-overs would make a nice pie with a rich meat gravy and steamed veg on the side. I'd also stir fry the chicken and some chopped veg with some honey and soy sauce; make cottage pie with the mince and a nice, chunky vegetable passata to accompany pasta. With the remaining veg, I'd make a variety of soups: butternut bisque, country vegetable and Turkish lentil, plus any combinations that came to mind!

ReplyDeleteI'd start off with a roast chicken dinner, served with some of the lovely veg. Then I'd make a stock using the carcass, celery, carrot, onion and bouquet garni. I'd use this to make a risotto and some vegetable soup. Yes please!

ReplyDeleteI'd roast the chicken and stir-fry the vegetables, then I'd combine some of the sliced chiken breast with the vegetables and some noodles for a super-fresh oriental supper. I'd use any leftovers the next day, in a noodle soup :-)

ReplyDeleteI'd roast the chicken with garlic and lemon and put a peeled onion in the cavity. I would roast the vegetables with thyme and once the chicken is cooked, remove the onion and liquidise to add to the gravy.
